How do I know what size water heater I have?

Answer:On your water heater you will find a data card/sticker.  It will have a model number, serial number, gallons, but if gas and kw if electric.

What is a safe temperature to set my water heater to?

Answer: Water heaters have been factory set at 120°F for decades
120°F is recommended in every water heater manual, even heavy-duty high-temperature commercials heater manuals when they supply hot water to end-user taps. "Maximize efficiency by setting to a minimum temperature that supplies acceptable hot water supply."
All residential water heaters have thermostat range of 90-160°, with typical bath shower temperature 104°.
Some commercial heaters have a higher range to meet specific needs. Please remember that hotter water may be comforting to some, but can be deadly to many.

How to make sure you are getting a fair quote for your water heater replacement?

Answer: Getting a couple of different quotes is always recommended.  Always make sure you are comparing apples to apples.  Warranty, gallon, brand, and reviews of the company.
